Justine Martillotti’s Dinner Party Playbook

While hosting a dinner party is a rare occasion for most, influencer, home cook, and recipe developer Justine Martillotti of @justines.table has mastered the art. At least once a week, in her Upper West Side apartment filled with exposed brick, she serves up fruity and flavorful cocktails like her roasted cherry gin fizz made with Sparkling Ice Cherry Limeade, as well as simple but elegant dishes that focus on fresh, seasonal produce. Like herbed roast chicken piled high on a platter with fries, tossed with fragrant sprigs of thyme and sage, or fresh pappardelle with tomato butter sauce, topped with a dollop of fresh ricotta and anointed with olive oil — warm, comforting meals people can gather around.
But hosting isn’t new for Martillotti. She grew up watching her Italian family in the kitchen, witnessing her grandmother bake bread or grandfather toss together a tomato basil salad, and how it brought people together. “They’ve all inspired me to create a welcoming home for other people to enjoy,” she says. While she’s a natural, she also has a tried and true method to make things easier on herself. After all, dinner parties can be stressful. But Martillotti has mastered the art of less-is-more, and yet still manages to make her dinner parties look chic, warm, and welcoming.

If the host is running around stressed, it’s going to hinder everyone’s ability to have a good time. That’s why she does as much as she can beforehand and has her guests get in on the action. “Day of is reserved for cooking only,” she says. In the days beforehand, she’ll make a playlist, food shop, and set the table. “It brings me so much joy to see it set up while anticipating the party,” she says. For the setting, she tries not to overthink it, and instead focuses on something simple yet unexpected. “I absolutely love a taper candle sticking out of a pomegranate or a radicchio,” she says.
As for what to serve, Martillotti has a tried-and-true formula: “My perfect sequence for hosting is a welcome cocktail or mocktail and a small bite,” she says. “Followed by a big salad, a pasta course, then usually a roast chicken and a veg paired with a white or red wine. Then of course a dessert, fruit, and an amaro to sip on.”
While it may seem like serving multiple courses is a lot of work, nearly everything is handled once the guests step through the door. Even the welcome cocktails are batched beforehand. “The best part about pre-batching a cocktail is the consistent result,” she says. “When I’m hosting, it’s a bit hard to nail each individual cocktail. It also can allow a fun element for the guests to add fun garnishes I like to put out at the drink station.” Her new favorite batch cocktail? A roasted cherry gin fizz made with Sparkling Ice Cherry Limeade — a flavored sparkling water packed with the flavor of sweet cherries and tart lime, vitamins and antioxidants, and zero sugar. In it, she mixes gin with roasted cherries, lime juice, and Sparkling Ice for a flavor-packed, bright and bubbly drink. “The roasted cherries bring a rich, sweet caramelized flavor while the lime contributes a tangy element, and the Sparkling Ice Cherry Limeade adds a bubbly and refreshing quality, making the drink lively and vibrant.”
As for the food, she’ll hand-make the pasta a few days before the dinner and pop it in the freezer. “It’s impressive, takes even less time to cook than dried pasta, and is therapeutic to make,” she says. “My latest tradition has been having friends over for an early Sunday dinner, and teaching them a new handmade pasta shape. It saves me time, and gets them involved.” Once guests arrive, the cocktails are made, the pasta comes together in a few minutes, the roasted chicken is already resting, and dessert is waiting off to the side for its time to shine.
See below for Martillotti’s batched cocktail recipe. It can be scaled up or down depending on how many people you’re expecting, but making one big batch that ensures everyone gets two cocktails is a great bet.
Roasted Cherry Gin Fizz with Sparkling Ice Cherry Limeade Recipe
Serves 10
Ingredients:
5 cups cherries, pitted
1/2 cup honey
1/2 cup water
Ice cubes
1 750 ml bottle of gin
5 ounces fresh lime juice
4 bottles Sparkling Ice Cherry Limeade
Lime slices, for garnish
Directions:
1. Preheat your oven to 400°F.
2. Place the pitted cherries on baking sheets lined with parchment paper or in roasting pans.
3. In a large bowl, mix together the honey and water.
4. Roast the cherries in the preheated oven for about 15-20 minutes, or until they are softened and slightly caramelized. Remove from the oven and let them cool.
5. In a large pitcher, add ice cubes, the roasted cherries (reserve some for garnish), gin, and fresh lime juice. Stir until the mixture is chilled.
6. Once guests arrive, strain the mixture into glasses filled with ice cubes.
7. Top off each glass with Sparkling Ice Cherry Limeade.
8. Garnish each glass with lime slices and reserved roasted cherries.
